Hearty Chunky Style Tomato Soup with Leek and Bacon

As far as I know, you can’t purchase a tomato flavor of Campbell’s popular Chunky soup, but if you could, it would probably look and taste something like this! Enjoy the photos and the recipe below.

 

 

 

 

 


 

Hearty Chunky Style Tomato Soup with Leek and Bacon

 

2 cans crushed tomato

1 quart chicken or vegetable stock

1 quart water (add more or less to reach your desired consistency)

2 tblsp butter

2 tblsp flour

4 slices bacon

1 stalk celery, chopped into small pieces

1 large carrot, diced into small pieces

3 small shallots, diced

1 leek, sliced

1/4 cup pot barley

1/4 cup brown sugar

1 tsp dried thyme

1 tblsp dried basil

1 tblsp salt (to taste!)

1/2 tsp black pepper

1 bay leaf

10 drops Worcestershire

1/2 tsp cayenne pepper

1/4 tsp garlic powder

cilantro for garnish

 

In a large pot, brown the bacon and reserve for later. Add butter to the bacon grease and melt. Add flour to the grease mixture, stir, and cook for a minute to make a roux. Add leeks and other vegetables and sweat on medium heat until starting to turn translucent. Add chicken stock, crushed tomato, water and mix well. Add salt, pepper, bay leaf, thyme, basil,  cayenne, wooster, garlic powder, brown sugar, and pot barley. Chop cooked bacon into bits and add back into pot. Bring just to a simmer for 45 minutes to one hour. Serve with grilled cheese. Enjoy!
