It’s rabbit ‘season’ at our place so we happen to have a few in our fridge and freezer. Rabbit is great on its own and mildly seasoned, but this time around I wanted to attempt to infuse some bold flavors so I created two marinades, the first one being rosemary and thyme based, and the second being a spicy southern style chipotle. Our fresh rabbits had been sitting in these marinades for a couple days so it was time to try one out! Although I didn’t quite get the sear I wanted on the rabbit this time, the big rosemary taste more than made up for it. Prepared in this way, the flavor was very similar to rack of lamb but with a texture more resembling chicken. I can’t wait to try the chipotle marinaded rabbit!
