Fried Chicken with Biscuits and Gravy

Today we had fried chicken with fresh cheddar biscuits and gravy…. wonderful comfort food! Enjoy the photos and biscuit recipe below!

 

 

 

 

 

These are delightful biscuits best enjoyed straight from the oven with a bit of butter.

2 cups flour
1/2 cup unsalted butter
1 cup cold milk
1 cup cheddar cheese, grated
2 tsp baking powder
1/2 tsp salt

Cut butter into mixed flour, salt, and baking powder in a medium bowl until it resembles coarse crumb.
Add cheddar and mix well.
Make a well in the center and add milk.
Mix until combined. Do not over mix.
Turn out onto a floured surface and fold dough in half about ten times.
Roll out and cut into desired size with a biscuit cutter.
Bake in a preheated oven at 375 F for about 20 minutes or until tops are golden brown,

Chick Fil A Style Fried Chicken Breast Sandwich

On a typical monthly shop we usually buy whole chickens by the bag and break them down ourselves at home. We get a better deal that way and we end up paying less than about $6.00/kg. Every so often we make deep fried chicken sandwiches and have been experimenting with this recipe for awhile. Enjoy the photos!

 

 

 

 

 

Chick Fil A Style Deep Fried Chicken Breast

 

1 chicken breast, halved

1 cup pickle juice

1 cup white flour (make 1/2 brown for more authentic taste)

1 tblsp icing sugar

1 1/2 tblsp light dry malt extract

1 tsp dry mustard

1/2 tsp baking powder

totally optional:

1 tsp dried thyme leaves

1 tsp dried summer savory

1 tsp poultry seasoning

 

1/2 tsp paprika

salt and pepper

 

1 egg

1/2 cup milk

 

Peanut oil for frying

 

Marinate halved chicken breast in pickle juice for one hour then drain. Dry chicken thoroughly with paper towels. Mix together the egg and milk in a bowl. In a separate bowl, mix together the first group of dry ingredients. Batter the chicken by dunking and wetting it with the egg mixture, seasoning with salt, pepper, and paprika, then coating thoroughly with the flour mixture. Return the floured chicken to the egg mixture once more and coat again thoroughly with the flour mixture before setting down on a cooling rack. Let rest while you turn on the heat for your deep fryer, heavy pan, or dutch oven and heat oil up to 325 degrees F. Just before you add the chicken breast pieces to the deep fryer, dredge them in the flour mixture once more. Fry for 7-10 minutes, less if you have pounded them out, before removing to a cooling rack.

For the most authentic taste experience, serve on whole wheat buns toasted with honey butter, topped with vinegar marinaded pickle slices.
