First Wedding Anniversary

June 25th 2016 Morgyn and I walked down the isle of her Mom’s apartment and we tied the knot! We have always wanted to make it official and we finally did! Marrying my wife was one if not the best decision I have made in my life. What a big year for us 2016 was! We bought our piece of land with our house on it in the Cariboo, got married and started our own life out here! We had a few days celebration this year to remind ourselves that getting married was and still is an important time in our lives! Knowing that I have the support of my wonderful wife througout my ups and downs, is a very comforting feeling! We have always had a special relationship, we are soulmates and I love Morgyn very much! Downing/Salt Lake Some treats we got at the local farmers market #Horstings Local bread! Downing/Salt Lake is a beautiful spot! It’s not too far from our place and has water you can dip your toes into! This was the first time in a long time I was barefoot at any body of water!   We spend a lot of time out in our garden..at #Horstings we bought a few Strawberry plants and Squash. We put them in our rows! First things we have permanently planted in the ground at our place 🙂 Morgyn spent a bit of time putting together a water irrigation system for our rows so we don’t have to water them with our hose! We brought over our Rhubarb from our old place in the Fraser Valley BC...
Eggplant Curry

Eggplant Curry

It’s been awhile since we have made a curry. It is always a great time to make curry but nothing beats a warm meal on a chilly afternoon. We have bought eggplant before but have found that the larger ones are sort of bitter and not so tasty. We watch a lot of food shows on the TV and something that has been coming up a lot has been dishes using this vegetable. We have seen that the smaller eggplants have much more flavour and so we bought a few to try out. It took us a few days to figure out how we were going to incorporate our vegetable into our dish. We really wanted to make something that was especially flavorful to make. It’s always fun making a curry with my sweetie because she tends to make things more authentic. What I mean is that she makes things from scratch, traditionally and not from a pre mixed jar. Not that you can’t have a delicious curry using something pre made but it is part of the experience in our kitchen to make the recipe ourselves. Here are the photos that I took while she was creating this awesome eggplant curry. First Morgyn fried up the eggplant Gorgeous colour! Next she made the body of the curry, and she added back the eggplant Let it simmer for a short while Can you guess the secret ingredient? Our curry was placed on a bed of home made coconut lime rice....

Burger Night

We had burgers last weekend at our neighbours house! Morgyn made smash burgers on the cast iron grill and home made buns. They turned out awesome 🙂 We had a few liquor shots afterwards and watched the movie Everest. It was great fun!
